At Kahiltna Birchworks/Alaska Wild Harvest we are producers of pure Alaska birch syrup. While not traditionally considered farmers (we are not growing the birch trees); we are farmers in the sense that we harvest the sap from the trees - currently 3500 - during a brief and intense harvest period each spring. At a ratio of 100 gallons of sap to produce 1 gallon of syrup, birch syrup - compared to 40:1 for maple; birch syrup is difficult to produce. It is also quite rare - less than 1500 gallons produced worldwide - and most of that here in Alaska.
In 2008, we produced 630 gallons of CERTIFIED ORGANIC pure birch syrup on our remote homestead in Alaska's upper Susitna Valley, and 100 gallons at our new "satellite" production site on the road system near Palmer, Alaska.
As far as we know, we are the world's largest producer of birch syrup. In making pure birch syrup, birch sap is concentrated to pure syrup; nothing is added in this process. Our birch breakfast syrup, also now certified organic, is produced by concentrating birch sap to about 60% and then adding organic evaporated cane juice. This is a lighter and more economical alternative to pure birch syrup, but still offers that wonderful "birchy" flavor. We use our pure syrup as an ingredient in our other delicious products, and produce a line of delicious jams - using local wild berries, sauces, confections, and fruit syrups. We are a small family farm-style business, creating unique and delicious artisanal products. We can be found in Alaska at the Downtown Anchorage Market, every Saturday and Sunday from mid-May to mid-September.
